Bourbon Spiked Waffles Recipe

8oz AP Flour 1/2 Tsp Kosher Salt 1 Tbsp Baking Powder 1 Tsp Cinnamon 1Tsp Nutmeg 3 Large Egg Yolks, Beaten 12oz Milk 1 Tbsp Bourbon (or Vanilla Extract) 4oz Butter, Melted 3 Large Egg Whites, Beaten till Medium Peaks 1oz Sugar Sift together dry Ingredients. Combine Egg yolks, milk, melted butter, and vanilla extract. In a separate bowl whisk the egg whites until stiff peaks. Add the liquid ingredients to the dry ingredients and mix until just combined (Don’t over-mix). Right before you are ready to cook the waffles, gently fold in whipped egg whites into batter. Pour enough batter onto a lightly greased, preheated waffle iron to almost cover the surface. Close the iron. Cook the waffles until the steam is no longer emitted from the iron. Waffles should be crispy and brown. Serve with lemon & thyme curd, confectioners sugar, syrup, and macerated fruit.
